Simple, quick and easy homemade soup that is low-fat and healthy - a meal by itself. Is even low-carb! Even the kids love this one.

"I modified this recipe a bit. Instead of using water and bouillon cubes, I used chicken broth for extra flavor. I used oregano, basil, salt, pepper, for seasoning. I used fresh celery, garlic, and carrots instead of frozen. I also added my own homemade noodles rather than buying prepackaged ones. So, I guess I entirely altered this recipe..but it turned out amazing! " - devfet

8 cupsWater
3 Chicken breasts; boneless, skinless
1 tbspSeasoned Salt; to taste
6 tbspsChicken bouillon
1 tspPepper; to taste
1 tbspGarlic; minced, to taste
Italian seasoning; to taste
2 cansMixed vegetables; drained
1/2 pkgWide noodles
1 tbspDried minced onion; or onion flakes

Simple Homemade Chicken Noodle Soup Preparation

This is simple - put water, chicken and seasonings into large pot. Cover & cook over medium heat until chicken is done (about 1 hour to be safe). Remove chicken from pot let cool a bit and then cut into pieces. Return chicken to pot along with canned vegetable and noodles. Let cook until noodles are done (about 20 minutes). Serve.

Notes

Season to your own family's tastes (I generally add more seasonings for my family). I also us a whole bag of noodles for a "thicker" soup that eats like what my husband calls "fork food".

    It was really good. I added more noodles, and seasoned to my own taste with just pepper, salt, and garlic salt.

    Very tasty and filling served with whole grain rolls for lunch. I substituted whole grain spaghetti noodles for the egg noodles.

    I used this as a base and doubled it left out the bouillon but used chicken broth. My mother always put smoked sausage in hers so I did also along with celery. We ate it with forks and used homemade bread to sop up the juice... Very good

    Our family loved this. I used chicken broth instead of the bouillon cubes & fresh carrots & celery instead of frozen or canned vegetables. I also used small sea shell noodles & it turned out great.

    My husband and I both loved this recipe! He was feeling under the weather and he said it made him feel better.I did add more water 2 more cups so a total of 8. We wanted a little more broth. Also i did celery and carrots only! Great!
