Wonderful Baked Squash Casserole with no cheese.

"Based upon the ingredients list, I expected it to be okay. However, after making the dish and serving it for dinner both my wife and I looked at one another and exclaimed, "Wow! Is this ever delicious!" I used Smart Balance instead of butter and Splenda instead of sugar. I WILL be making this again. Oh yeah... It's a dish that I plan to prepare and take over to my mother-in-law's Thanksgiving Day feast. :)

Original recipe makes 6 Servings
3 lb.yellow squash
1/2 c.Onions; chopped
1/2 c.cracker meal or bread crumbs
1/2 tsp.Black pepper
1 tbsp.Sugar
1 tsp.Salt
2 Eggs
1 stickreal butter

Aunt Fanny's Baked Squash Preparation

Wash and cut squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except half of butter to squash. Melt remaining butter. Pour mixture into baking dish. Then spread melted butter over top and sprinkle with cracker meal. Bake at 375 degrees for 1 hour.

Notes

Try the bread crums instead of cracker meal.

A delicious way to serve squash that kids will eat. Very easy to prepare. I used fresh breadcrumbs. Very flavorsome despite lack of ingredients. I did add a hint of garlic.

This has got to be the most delicious squash dish I've ever made, probably because of the butter. I added some slightly steamed broccoli and shredded Colby-Jack. For the crumbs I used crushed Ritz crackers.

This is very good, and I worried that it wouldn't be. I made everything the same as the recipe - which I always try to do so that I can give a fair rating. I was concerned that there wasn't enough flavor going on for this to be great, but it was actually very flavorful. A word of caution that I would like to add is that the baking time is very dependent on size and type of baking dish used. I baked this in my 13x10' casserole and 40 minutes was plenty of time. I think I would actually make this in a deeper, smaller casserole next time. For my tastes, the butter could be cut back to about 3/4 cup, with 1/2 cup to be used on the top, not IN the casserole. Both my picky husband and daughter really loved this. I will definitely stay on my short list.
