Wonderful Baked Squash Casserole with no cheese.
"Based upon the ingredients list, I expected it to be okay. However, after making the dish and serving it for dinner both my wife and I looked at one another and exclaimed, "Wow! Is this ever delicious!" I used Smart Balance instead of butter and Splenda instead of sugar. I WILL be making this again. Oh yeah... It's a dish that I plan to prepare and take over to my mother-in-law's Thanksgiving Day feast. :)" - sdw32701

| 3 lb.yellow squash |
| 1/2 c.Onions; chopped |
| 1/2 c.cracker meal or bread crumbs |
| 1/2 tsp.Black pepper |
| 1 tbsp.Sugar |
| 1 tsp.Salt |
| 2 Eggs |
| 1 stickreal butter |
Aunt Fanny's Baked Squash Preparation
Wash and cut squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except half of butter to squash. Melt remaining butter. Pour mixture into baking dish. Then spread melted butter over top and sprinkle with cracker meal. Bake at 375 degrees for 1 hour.
Notes
Try the bread crums instead of cracker meal.
