Prepare this delicious sausage-and-egg dish on Christmas eve while the kids are setting out milk and cookies for Santa. Refrigerate overnight, then pop it in the oven on Christmas morning for a quick and easy holiday breakfast.

12 ouncesBulk Breakfast Sausage; low-fat
3 slicesBread; tear into bite-size pieces
1/2 cupMonterey jack cheese; shredded
6 largeEggs
1 cupMilk; low-fat
1/4 teaspoonSalt
1/8 teaspoonBlack pepper
1/2 cupCheddar cheese; shredded

Christmas Morning Breakfast Preparation

Brown the sausage in a skillet over medium heat, stirring to crumble. Remove from heat, drain fat and set aside to cool.

Lightly spray a 2-quart baking dish with cooking spray. Place bread pieces in the bottom of the dish. Layer the sausage over the bread and top with Monterrey Jack cheese.

In a medium bowl, whisk eggs, milk, salt and pepper and pour into baking dish over the sausage and bread.

Top with cheddar cheese, cover dish with plastic wrap and refrigerate overnight.

Christmas morning, heat oven to 325 degrees. Remove plastic wrap from dish and bake casserole 40-45 minutes or until cooked through.

Notes

High-calorie, high fat, high chloresterol so you probably don''t want to make this dish more than once a year.

This casserole is delicious. I doubled the recipe and substituted turkey sausage for 1/2 of the sausage. I also added onion powder and 1 can of drained Rotel. My co-workers liked it!
