Made with Christmas Menu in 2005. The adults loved it! From the Step by Step Complete Cookbook.

"This is also a Greek recipe!
You better use fresh tomatoes (3-4 medium size).
I prefer to use only onions, pepper, salt and tomatoes
(no garlic and Oregano and Red bell pepper)

Gourmet tips: add "Siglino Manis" smoked pork made in Mani.

Original recipe makes 6
1 poundGreen Beans; fresh
3 tablespoonExtra Virgin Olive Oil
2 medium sizedOnion; chop
1 cloveGarlic; minced
4 teaspoonTomato paste
3/4 cupWater
1 tablespoonFresh Oregano; chopped
to tastePepper
Red bell pepper; diced

Green Beans with Onion Preparation

Trim ends from beans. In a large saucepan, heat oil. Add onions and garlic and cook 5 to 10 minutes until soft.

Add beans to onion. Mix tomato paste with water. Pour tomato mixture over beans, then add more water if necessary to cover the beans.

Add oregano, salt (we didn't use), and pepper. Cover pan and simmer 20 minutes or until beans are tender. Remove lid and boil to reduce the liquid. Serve garnished with chopped bell pepper or oregano sprig.

Grove tips: 12/24/05 We added the red bell pepper to the onion garlic mixture and used dried oregano instead.

Why tomato paste? It turned what was going to be some lovely fresh green beans into green beans and spaghetti sauce. Your picture with the recipe doesn't look anything like what I ended up with...

A great recipe for cooking green beans, everyone loved them! I didn't have any red bell peppers on hand, only green, and although; taste wise, it made little difference...using red peppers for garnish would have made the dish just a tad more attractive.
