Honey-Glazed Carrots

This simple side dish works with various meat main dishes. An easy dish for guests to bring, too.

"I used dehydrated orange instead of the fresh orange rind and also found the glaze mixed into the carrots alot better if it is slightly heated. Served the carrots with Rob's Cod Au Gratin, Stir Fried Garlic Snow Peas, Twice Baked Potato and Baked Zucchini Chips."

5 cupsCarrots; thinly sliced
3 tablespoonsParsley; chopped, fresh
2 tablespoonsHoney
1/2 teaspoonSalt
1/2 teaspoonOrange rind; grated, fresh
1/4 teaspoonBlack pepper; ground, fresh

Honey-Glazed Carrots Preparation

Bring water to a boil in medium saucepan. Add carrots; cook for 20 minutes or until tender. Drain well. Place carrots and remaining ingredients in a large bowl; toss gently.

Very easy to make, should be eaten immediately though. A wonderful addition to our Thanksgiving Feast!

Delicious!! But honey is NOT vegan. Like Katy above, there are many vegan substitutes - which I personally use and love agave nectar.

I might make this again. It was good but not outstanding. Good for Easter - where carrots are appropriate.

Many (most?) vegans also avoid honey. Other sweeteners can be used with some flavour variation (such as agave or maple syrup).
