This is a satisfying main dish meatball soup.

1 lbGround beef; sirloin
Acini di pepe pasta; divided
2 tbspPine nuts; finely chopped
1/4 cBread crumbs; dried
1 eaEgg
2 tbspParsley; finely chopped, divided
1 tspBasil; dried, divided
1/4 tspSalt
1/8 tspBlack pepper
1 cloveGarlic; minced
2 can (14 oz)Beef broth
1 can (8 oz)Tomato sauce
1/3 cOnion; chopped

Pasta Meatball Soup (Albondigas Soup) Preparation

1. Combine beef, 2 tbs pasta, pine nuts, bread crumbs, egg, 1 tbs parsley, 1/2 tsp basil, salt, pepper and garlic in a bowl. Form into 1 inch meatballs.

2. Bring beef broth, tomato sauce, onion and remaining 1/2 tsp basil to a boil in large saucepan over medium-high heat. Carefully add meatballs to broth. Reduce heat to medium-low; simmer, covered, 20 minutes. Add remaining 3 tbs pasta; cook 10 minutes or until tender. Garnish with remaining 1 tbs parsley.

Tip: Acini di pepe is a tiny rice-shaped pasta. You could also substitute orzo pasta.

I made this Dec 28 2005, and I would make this again.

    It was good but if you making double just use 1 can tomato sauce.

    Wow is this ever a great soup! Made this yesterday and everyone absolutely loved it. My only suggestion is that you need to make double. I bet you still won't have leftovers if you do.

    Very satisfying meal. The broth is missing something- maybe a little tang or spice(?) Will definitely make it again, but would doctor it up a bit. The meatballs are perfect.
