| 2 poundsboneless skinless chicken breasts; cut in 1" cubes |
| 2 largeonions; quartered |
| 1 cupbaby carrots |
| 3 mediumpotatoes; cut into 1" cubes |
| 3 cupsChicken broth |
| 1 teaspoonCelery seed |
| 1 teaspoonDried thyme |
| 1 teaspoonblack pepper; freshly-ground |
| Salt; to taste |
| 8 ouncesMushrooms; sliced |
| 1 cupfrozen corn; thawed |
| 1 cupfrozen peas; thawed |
Chicken Stew Preparation
Combine all ingredients, except peas, in the crockpot; stir well. Cover and cook on LOW 6 to 8 hours, until chicken is done and vegetables are tender; stir in peas the last 30 minutes.
This recipe yields 6 to 8 servings.
