|2 poundsboneless skinless chicken breasts; cut in 1" cubes|
|2 largeonions; quartered|
|1 cupbaby carrots|
|3 mediumpotatoes; cut into 1" cubes|
|3 cupsChicken broth|
|1 teaspoonCelery seed|
|1 teaspoonDried thyme|
|1 teaspoonblack pepper; freshly-ground|
|Salt; to taste|
|8 ouncesMushrooms; sliced|
|1 cupfrozen corn; thawed|
|1 cupfrozen peas; thawed|
Chicken Stew Preparation
Combine all ingredients, except peas, in the crockpot; stir well. Cover and cook on LOW 6 to 8 hours, until chicken is done and vegetables are tender; stir in peas the last 30 minutes.
This recipe yields 6 to 8 servings.
