I would only add a pinch of salt next time.I found this recipe in BigOven Chef1.mxp recipe box.

"These are very easy to make and taste great too! I do not have any self rising flour, so I used 1 3/4 cups of all purpose flour and 1 1/4 tsp of baking powder, back bacon and chedder cheese (used slightly more cheese and bacon than what the recipes called for). Turns out great! Would make this again soon and next time I will really grease my muffin tins generously. Thank you for sharing! ^,^"

1/2 cupsharp cheddar cheese; shredded
2 tablespoonsSugar
10 slicesbacon; cooked and crumbled
1 largeEgg; slightly beaten
3/4 cupmilk
1/3 cupVegetable oil

Bacon And Cheese Muffins Preparation

Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk, and oil; add to dry ingredients, stirring just until moistened. Spoon batter into well greased muffin pans, filling two-thirds full. Bake at 400 degrees for 20 to 22 minutes or until golden. Remove from pans immediately.
