Ingredients

1/2 cup Canned pineapple chunks; well drained and cut up
1/4 cup Sugar free maple syrup; regular maple syrup is also OK to use
1/4 cup Half-and-half cream
1 ea Egg; well beaten
1 ea Banana; sliced thin or mashed
3 cups Bread flour
1/4 cup Whole ground flaxseed meal
1 teaspoon Salt
3 tablespoons Butter
1 tablespoon Sugar
1/2 cup Shredded coconut
1/2 cup Mini marshmallows
1/3 cup Chopped almonds
1/4 teaspoon Baking soda
2 tablespoons Cinnamon
2 0.25-oz can Rapid rise dry yeast
1/3 cup Raisins; dried cranberries can be used as a substitute.

Preparation

Set machine on basic loaf, light crust, 1 or 2 pound loaf.

(Don't be afraid to open the lid of the bread machine to check the consistency of the dough. Add water if the dough is dry or flour if wet, as required, while the machine is running.)

After the baking cycle is completed, remove the loaf from the baking pan and place on a cake rack to cool.

Can be eaten as a breakfast bread. Excellent toasted with butter and jam.
