Add diced, hard cooked eggs, onions, celery and parsley to the hot, cooked potatoes. Save 2 tablespoons of bacon fat and add beaten eggs, sugar, spices, vinegar and water. Mix well. Cook egg mixture until mixture boils and thickens. Pour mixture over potatoes. Toss lightly with the crumbled bacon. Serve warm.
