Chinese Pork Fried Rice

Uses left over meat and is what my Chinese neighbor's father made at his restaurant! Can't get much more authentic than that!

Original recipe makes 8
6 cupsRice; cooked (2 cups raw)
4 Eggs
1 cupBean sprouts; fresh if possible
1 1/2 teaspoonsGourmet powder; (Accent)
4 tablespoonssesame Oil; or peanut oil
1 cupMeat; cooked and diced
2 cupsOnions; finely chopped
4 Scallions; chopped
1 dashSalt
1 dashPepper
4 tablespoonsSoy sauce

Chinese Pork Fried Rice Preparation

Place oil in very large hot skillet, add salt, pepper, gourmet powder and onions. Stir 3 mins then push mixture to one side and and fry eggs until firm. Add rice, bean sprouts, scallions and meat. Mix well and keep stirring for 4 mins. Add soy sauce, mix well and serve.

We live in an area with little fresh food and use green onions instead of scallions. I also sometimes add peas or snow pea pods cut into bite sizes. A tough of garlic with the onions at the begining is also good. My neighbor told me that her father would use all kinds of left-over meats and vary the vegetables.
