Cooking for two? This is as easy as it gets and tasty too!
"I thought it would be a good idea to sear each side of the chicken in a pan after dipping in the cheese mixture but it wasn't. Bits of the mixture fell off, began burning, even when I added oil, and I smoked up the kitchen. I tried again in another pan with one thin piece and it cooked through and was crispy and tasty. Chicken Parmesan for Two Preparation
Preheat oven to 350 degrees. In a bowl, combine Parmesan, oregano, paprika,
and salt and pepper to taste. Line shallow baking pan with foil. On a dinner plate melt the butter in the microwave and add the oil, now dip the chicken in the oil mixture and then dredge in the cheese mixture. Bake for 30 minutes or until chicken is completely cooked.
