Original recipe makes 3
1 poundSalmon fillets
1/2 cupGreen onion; chopped
1/4 cupCapers
1 tablespoonFresh dill; chopped
Fresh ground pepper
1 teaspoonLemon Rind; grated
1 1/2 tablespoonButter

Baked Salmon with Capers Preparation

Preheat oven to 400F.

Place a large piece of foil on a baking sheet and spray it with non-stick spray. Place the salmon on the foil and grind fresh pepper over it. Sprinkle grated lemon rind on the fish evenly.

Mix onions, capers and dill together and spread over the salmon evenly. Dot with butter then wrap salmon in the foil.

Bake salmon for about 30 minutes.

I'm amazed at how many online recipes call for 30 minutes (or more) for salmon cooking. Most pieces simply take 10 to 12 minutes... am I going crazy here? Obviously, it can depend on the size of the salmon and the temp of the oven. But I find that 10 minutes at 400 does most pieces of salmon nicely.. maybe 12 to 15 mins for thicker cuts.
