Reviews for Steve's Tomato-Basil Soup

Recipes »  Soups, Stews and Chili  »  Vegetable

This tomato basil soup is a terrific, warming soup for the winter months, and also enjoyable in the springtime.

It was inspired by an attempt to replicate the tomato-basil soup from Gordon Biersch, a San Francisco-based microbrewer with restaurants in CA and Seattle.

Too much garlic! Can definitely taste the quality of canned tomatoes

Very tasty meal. I used about 1/4 cup more onions than the recipe called for. The serving size was small. My husband and I ate 4 servings and did not have leftovers which I was planning for. We dipped homemade wheat bread in the soup and it was yummy. We will make this again and serve with grilled cheese.

Very good. I did add a little white wine to the garlic and onion saute.

This is an excellent soup. I did modify this by adding 4 oz of cream cheese, ¾ C. parmesan cheese, chopped sun dried tomatoes, and a small red hot Chile pepper. Also eliminated the oil and sugar, plus reduced the onion since my wife can’t tolerate it. Let it simmer for an hour and enjoyed!

This was so yummy! I am watching my calories so I ate the soup without the cream. To die for.

Awesome soup, reminds me of Max and Erma's (my favorite). I added dried basil to the first part, and them simmered with whole fresh basil leaves once all was added. Also topped with Parm cheese before serving. Served with a grown up grilled cheese!

This was so quick and easy I was nervous it wouldn't be good! It was excellent I did use one can of crushed and one can diced tomatoes . I make homemade soups a lot during the fall and winter months and this one is a keeper.

My wife and I loved this soup. Great on a winter afternoon for the two of us with some grilled cheese sandwiches. I also added the basil during the processing stage.

Tastes almost like the tomato soup at Carraba's. Very good!

I liked the soup. I added some basil when I added the crushed tomatoes. Fairly easy to make. Great light soup. Would be great with bread.

This was great! A few changes I'll make for next time. Less onion (maybe my half was too big). Tad less sugar. I added both fresh and dried basil when I added cream so they could all cook together a bit. Next time, I will also add some chunks of tomatoes after the purée because I like a chunkier soup. Th
