This tomato basil soup is a terrific, warming soup for the winter months, and also enjoyable in the springtime.
It was inspired by an attempt to replicate the tomato-basil soup from Gordon Biersch, a San Francisco-based microbrewer with restaurants in CA and Seattle.

ewtotel , 1 years agoThis isn't good, it's "holy-crap-I'll-never-buy-canned-soup-again" good! Very yummy. I added a tad of salt for my salt-loving wife, but otherwise made it just as directed.

Dancin2the80s , 1 years agoAmazing! I love tomato soup and can't eat the canned stuff because of an allergy, but I'm not complaining, this was easy and delicious. I will continue to make it using this recipe. I don't like onions so I omitted those and used onion powder instead. Also reduced sugar, husband raved about it as we'll. it's now a favorite.

kelleyurankar , 1 years agoVery tasty meal. I used about 1/4 cup more onions than the recipe called for. The serving size was small. My husband and I ate 4 servings and did not have leftovers which I was planning for. We dipped homemade wheat bread in the soup and it was yummy. We will make this again and serve with grilled cheese.

EdsGoodStuff , 1 years agoThis is an excellent soup. I did modify this by adding 4 oz of cream cheese, ¾ C. parmesan cheese, chopped sun dried tomatoes, and a small red hot Chile pepper. Also eliminated the oil and sugar, plus reduced the onion since my wife can’t tolerate it. Let it simmer for an hour and enjoyed!

schmoe111 , 1 years agoAwesome soup, reminds me of Max and Erma's (my favorite). I added dried basil to the first part, and them simmered with whole fresh basil leaves once all was added. Also topped with Parm cheese before serving. Served with a grown up grilled cheese!
