"this dressing is exceptional. i was actually looking for a blue caesar dressing recipe as i thought it sounded like a good combination. followed this to the letter with one addition. as a vegetarian, i do not eat anchovies. i once got a tip from a professional chef in an upscale, healthy restaurant to substitute kalamatta olives for the anchovies. although this recipe did not call for anchovies, i added the olives as suggested by my chef friend. they add a briny flavor that is reminiscent of salty anchovies. 1 Egg; lightly beaten

Pretty basic ceasar recipe, but ya got the basics

I first made this recipe almost two years ago and it has become my 'go to' recipe for caesar! I continue to substitute chopped capers in lieu of anchovies... YUM!!

Update. I made this it was good for a traditional caesar dressing, but I didn't use the anchovies because of my friends' preferences. So it seemed like it was lacking. If I make it again I'll use the anchovies or try the olive option.

Great easy recipe. I thought that it could use a little more garlic and would have liked it to have a little more kick to it! but the blue cheese was a great idea. I served this with buffalo panko chicken on top!

Wow! So easy and yummy too! Blue cheese in Caesar was a new one for me and added a nice tang of flavor, although I think I would use less blue cheese in the future. Also, I did not have anchovies on hand so I used approximately two tablespoons of chopped capers and it worked great!

VERY good recipe. I substituted another 1/4 cup of Parmesan for the Blue cheese (personal taste) and eliminated the egg in place of 1 tpsp of Mayo to reduce the risk of salmonella because of not knowing the refrigeration situation at a party I was attending. Delicious and I received many compliments!
