"this dressing is exceptional. i was actually looking for a blue caesar dressing recipe as i thought it sounded like a good combination. followed this to the letter with one addition. as a vegetarian, i do not eat anchovies. i once got a tip from a professional chef in an upscale, healthy restaurant to substitute kalamatta olives for the anchovies. although this recipe did not call for anchovies, i added the olives as suggested by my chef friend. they add a briny flavor that is reminiscent of salty anchovies.
