Goose Creek Pear and Blue Cheese Salad with Shallot Dressing

|1 bagWild Red Lettuce Mix|
|2 headsBibb Lettuce|
|2 Pears; peeled and chopped|
|1/2 cupBlue Cheese; crumbled|
|1/2 cupPine nuts; toasted|
|1 cartonCherry tomatoes; sliced|
|-- Shallot Dressing --|
|1/2 cupSaffola Oil|
|2 tablespoonRed wine vinegar|
|1 tablespoonDijon mustard|
|1 Shallot; or Onion Powder|
Goose Creek Pear and Blue Cheese Salad with Shallot Dressing Preparation
Chill the plates.
Make the salad... you can toast the Pine Nuts and make the dressing the night before.
For the dressing, combine all the ingredients and blend until smooth. Chill until serving time.
You can subsititue the Apples for the Pears and Pecans for the Pine Nuts for another wonderful entertaining salad.
