Goose Creek Pear and Blue Cheese Salad with Shallot Dressing

Goose Creek Pear and Blue Cheese Salad with Shallot Dressing

Ready in 15 minutes

This salad is a hit at every party and holiday dinner.

"Served this at a sparkling-wine tasting party we just hosted, and four people noted to me how much they enjoyed it. Honey-Shallot dressing paired nicely with the sweetness of the champagnes we tried. Be sure the pears are fully ripe."

Shown without the dressing. We peeled the pears with a vegetable peeler because they were quite crisp (just under-ripe)... but the salad was still delicious. photo by stevemur stevemur

This was FANTASTIC -- I made extra dressing and it kept for a few days. I only used butter lettuce and would eat this every day if I could!

Suggested winter/fall variation: Add walnuts instead of pine nuts, and add dried cherries instead of tomatoes. Delicious!

Made dressing ahead 1 day and refrigerated -- brought it to room temperature before serving. Terrific combination of flavors; will definitely be making this again.
