20 Minute Shrimp Creole

I have made this dish a few times and each time I can't believe how much flavor it has. It is a great dish and very fast.

Original recipe makes 4
1 poundShrimp
1 14-oz canTomatoes; diced, undrained
1 cupChili sauce; Low Sodium
1/2 cupCelery; chopped
1 1/2 cupGreen pepper; chopped
1/4 cupOnion; chopped
2 clovesGarlic; minced
1 teaspoonBasil; dried
1 teaspoonParsley; dried
1/4 teaspoonRed pepper; crushed
1/4 teaspoonSalt
1 cupMinute Rice; prepared

20 Minute Shrimp Creole Preparation

Spray deep skillet with nonstick spray coating. Preheat pan over high heat. Cook shimp in hot skillet, stirring, for 3 to 5 minutes, or until done. Reduce heat. Add tomatoes and their juice, low sodium chili sauce, green pepper, celery, onion, garlic, basil, parsley, crushed red pepper, and salt. Bring to boiling; reduce heat and simmer, covered, for 10 minutes. Serve over hot cooked rice or whole wheat pasta.

Notes

Variation on 20-Minute Chicken Creole, works great with peel and eat shrimp. It a must have for a quick tasty dish.

I would spice this up just a bit with tabasco sauce or alittle more red pepper. Enjoyed this fast meal.
