| margarine or butter; optional |

Curried Egg Sandwiches Preparation
Put the eggs in a saucepan and cover with water, place lid on and bring to a boil, then when boiling. remove lid and lower heat to simmer or if electric stovetop you can turn the heat off as the element will have enough heat in it to finish the cooking process of 5 miutes simmering. Remove from stovetop and drain, then cover the eggs with cold water and let sit for 5 minutes.Take the eggs out of the water leaving the water in the saucepan to rinse the eggs after shelling them and then placing them in a bowl lined with paper towles to dry. Lift the paper towles out from under the eggs and using a steak knife and a dinner fork cut up the eggs finely then mash with the fork, add the curry powder a little at a time to suit your own taste and then add the mayonnaise and mix well.Spread the bread slices with margarine or butter or even leave dry if preffered, spread the eggs on and sprinkle with salt and pepper or you can add the salt and pepper to the egg mixture.
