Breakfast Bread. This is a delicious bread which can be used for breakfast or snacks. I'm also considering baking it as muffins the next time.

"This bread was so very moist and delicious. My whole family is hung up on raspberry jelly so I needed to find a recipe to start using up all those frozen strawberries I grew last summer. This is it! I didn't completely thaw the berries before mixing them into the batter so it was very cold. Consequently, I had to bake the loaves for an extra 30 minutes but they turned out perfect. I found there were some pretty big spaces where the berries had shrunk during cooking, making the loaves very fragile so I will chop them smaller next time. This one's a keeper! Original recipe makes 1
3 cupsAll purpose flour
2 cupsSugar
1 teaspoonBaking soda
1 teaspoonSalt
1 teaspoonCinnamon
3 Eggs
1 cupVegetable oil
1 teaspoonVanilla
2 10-oz packagesFrozen strawberries; thawed and chopped
1 cupPecans; chopped

Carolina Strawberry Bread Preparation

Preheat oven to 350 deg. Combine flour, sugar, baking soda, salt, and cinnamon.

Blend eggs, oil, vanilla, and strawberries together in a separate bowl. Add strawberry

mixture to dry ingredients, and mix well. Stir in pecans. Pour into two greased

9" X 5" X 3" loaf pans or eight greased 5-3/4" X 3-1/2" X 2" mini loaf pans. Bake for

45-60 minutes, or 40-45 minutes if using mini loaf pans, until a toothpick inserted in the center

comes out clean. Cool in pans on wire rack for 10 minutes; then remove to wire rack to

complete cooling.

Yields 2 standard loaves or 8 mini loaves.

    This was excellent. I used fresh strawberries an coated them in flour and had to cook for an hour at 350 degrees. This is super easy to make and taste wonderful with cream cheese.

    I used frozen strawberries as the recipe called for. It was so delicious and perfectly moist! A big hit with my family. It made 5 mini loaves for me though. I filled each tin up 3/4 of the way. Served it warm with butter!
