Grilled Roast Chicken Preparation

Wash Chicken inside and out. Mix all the rub ingredients well. Place 2 tablespoons of rub inside bird and shake to distribute rub. Rub the outside with more of the seasoning. Let stand 1 hour. Place charcoal on sides of grill and a drip pan made of foil down the middle. When coals are hot place chicken in middle of grill. Cover and leave for 1 hour and 15 min. Try not to open grill often becasue this lets the heat out and increases the cook time . Open vents on grill to maximum for highest heat. Test chicken in the middle of breast. I like to take the chicken off the grill when it reaches 175 and cover with foil for 15 min. The chicken will continue to cook and will reach 185 which is considered done during the rest time. This prevents the breast meat from drying out.

I have made this recipe twice in the past three weeks. This is a wonderful alternative to baking a whole chicken. Great for hot summer days when you don't want to heat up the house. I rubbed some of the spice mixture under the skin and let it set in the refridgerator for a couple of hours. The skin comes out crispy and brown and the meat is extremely moist. My husband loved it.

This was very good, and let's face it, finding good recipes for grilling whole chickens isn't always the easiest thing to do. The amount and combination of spices frightened me a little, but the flavor was fabulous. Amazingly, it wasn't too spicy. Not overpowering but certainly there. I did rub some under the skin like one of the reviewers mentioned, as well as on the outside. This chicken should lend itself to all kinds of side dishes, not just what you would consider for cajun foods. I will be making it again. Thank you for the new chicken recipe!

The only thing i did different was put some of the rub under the skin. XXXceleent. I think this can also be used on boneless chicken breasts. Thank you so much for the recipe. Hard to find really good chicken recipes
