This roast is a sure hit, and is traditionally served on New Year's Day, though it is great for any time of the year!
Slice onion and place on bottom of slow cooker. Add roast. Combine remaining ingredients and pour over roast. Cook on low 6-8 hours or on high 3-4 hours.
Amy's Tip: For a delicious, creamy pork gravy, ladle juice into a 2-cup measuring cup to the 1-cup mark (if you do not have a full cup of juice, use as much as you can). Add milk to the 2-cup mark. Whisk in two tablespoons of flour and heat in a small saucepan over medium-high heat until the gravy thickens. (If not thickening, use a small amount of rue.)
