Original recipe makes 10
1/2 poundBacon; diced
4 eaCarrot; diced
1 eaRed bell pepper; diced
1 eaMedium onion; diced
2 cupPotato; diced
2 poundFrozen corn
2 12-oz cansCreamed corn
1 quartmilk
1 pintHalf-and-half cream
2 teaspoonSalt
1 teaspoonThyme
1/2 teaspoonPepper
2 eaJalapeno peppers; diced

Corn Chowder Preparation

Cook bacon in a large pot over med-high heat until crispy. Remove bacon. Reduce heat to med-low. Add onion to drippings and saute 5 min. Add carrot, potato, bell pepper, salt, pepper and thyme. Cook 5 min. Puree cream corn in blender until smooth. Add milk, corn and half and half. Simmer until heated through and potatoes are done. Return diced bacon to soup. Ladle into bowls. Serve diced jalapeno peppers on the side for added heat if desired.

Amazing! It takes a bit of time to prep with all fresh ingredients, but it's well worth it. The wife is in love with this recipe and the kids eat it up, too!

This was awesome!!! I added tilapia to the vegetables when simmering and subbed turkey bacon. Tons of flavor. Topped it with cheese and what chowder is complete without oyster crackers... Very hearty meal, my son can't stop eating it

It smelled great but it was not the best tasting. I like my chowder to be more thick than runny. It was just too liquidy for me. And this recipe makes a TON of soup so I'm disappointed all those yummy ingredients went to waste.

Love the recipe - it is relatively simple, and tastes phenomenal! Most time is spent with prep cutting the potatoes, measuring the spices, etc., but once you are past that it requires very little attention while simmering.
