For serious chocolate lovers! This flourless chocolate cake is easy-to-make and to die for!

"This was an absolute hit. I made it as my wife's birthday cake. Our children have not eaten cake for years, but were eating the crumbs off the plate. Recipe is super easy to make. I used parchment paper to line the bottom of the pan, with a thin coating of butter on both sides. The cake had absolutely no problem coming out of the pan and the paper fell off the cake. Butter on the pan side keeps the paper in place while making the cake." - Fatherofseven

4 ouncesChocolate; Fine quality bittersweet (unsweetened)
1/2 cupUnsalted butter
3/4 cupSugar
3 largeEggs
1/2 cupCocoa; Unsweetened cocoa powder

Flourless chocolate cake Preparation

Preheat oven to 375.

Butter 8 inch round baking pan and line bottom with round piece of wax paper. Butter paper.

Melt chocolate and butter in a double boiler or metal bowl set over a saucepan of barely simmering water, stirring until smooth.

Remove top of double broiler or bowl from heat and whisk sugar into chocolate mixture.

Whisk in eggs.

Whisk in cocoa powder.

Pour batter into pan and bake in middle of over for 25 minutes or until top has formed a thin crust and a knife comes out clean.

Cool in pan on rack from 5 minutes.

Invert onto serving plate and carefully remove wax paper.

Dust with additional cocoa powder if desired.

Serve plain or with ice cream or whipped cream.

Note:

-I use Ghiradelli bittersweet chocolate. Be sure to get the good stuff. It's worth it.

-If you REALLY love dark chocolate, try the Hersey's Special Dark Chocolate cocoa powder. It's less sweet, and even chocolatier (if that's possible)!

    Everyone loved it and has been asking me for the recipe since I made it! I used half special dark coca and half regular coca. Really easy to make and a huge hit! Will absolutely make again.

    I have been making this cake for years and it always keeps the 'chocoholics' in my family happy! My little sister has celiac so she is unable to eat wheat / gluten so that is actually why I started making it. I dust it with powdered sugar and then serve with whipped topping or french vanilla ice cream.
