This is a hearty and very enjoyable different approach to pancakes that is well worth the effort! Preparation time is minimal for such a great way to start the day.

1 1/2 cupsmilk
1/3 cupButter or margarine
1 1/2 cupsQuick-cooking oats; uncooked
1/3 cupFlour; Unsifted
1 1/2 teaspoonBaking Powder
1/2 teaspoonSalt
1 tablespoonSugar or Splenda
1/4 teaspoonCinnamon
2 Eggs; separated
2 Banana; Ripe, peeled and diced

Banana Oatmeal Pancakes Preparation

In a 1-quart saucepan, heat the milk and butter until the butter melts and small bubbles appear around the edge. Remove from heat and stir in the oatmeal; let stand until cool.

On a paper, thoroughly stir together the flour, baking powder, salt, sugar and cinnamon.

Whisk the egg yolks into the oatmeal mixture; add the flour mixture and stir until just blended.

Beat the egg whites until stiff; fold along with bananas, into the oatmeal mixture.

On a lightly greased hot griddle, using moderate heat, drop batter by 1/4 cupfuls several inches apart; with a small spatula, spread each pancake until 3 to 4 inches in diameter. Cook until bubbles appear and top is slightly dry, about 3 minutes, turn and brown other side.

Serve with soft butter or margarine and maple syrup or honey.

Makes about 16 pancakes or 4 servings.

Notes

I have used this recipe for the last 30 plus years as a special occasion breakfast. I do not recall where the recipe came from, but this is one of my favorite breakfast creations.

This recipe tastes good but I wont be making it again. Recipe is way to thick. No matter how much milk you put in it. Great idea though.

A complete meal in a pancake! I made them on the weekend and ate them all week. They didn't even get off the serving plate before I ate them without even adding syrup! I also used white wheat flour since its a little healthier. Guilt free!

Pancakes were a whole bunch of work for some just alright pancakes. My wife and I ate them but if I make them again I am going to have to modify the recipe. Definitely gonna mash or blend the bamamna and the fluffy egg whites were a waste of Tim.

I Used Stevie instead of the sugar and i added a tad bit of sugar. Delicious and I usually make it on weekends. It is a must try.

Good but I made improvements, I added 2 1/2 teaspoons brown sugar to add more taste and 1 1/2 teaspoon vanilla. Very good. Could use more flower next time

Very good recipe... I modified it as well:) I used 1 cup flour and 1 cup oats and added a ts vanilla. Also I threw everything in the blender because I knew my kids would prefer no chunks of banana in their pancakes

Very good. Needs a little more flour to bind the cakes together. Also added a little vanilla. Served with maple syrup with butter melted in. Yumm!

Relatively easy to make. I enjoyed them but the children did not real care for them. Most likely because the children are used to light and fluffy but these are rather heavy. Over all good.
