Light and fluffy buttermilk pancakes.
"I have 5 children and use this pancake mix weekly. My youngest son could get them every day! Much better than any store bought mix. Light and fluffy with great flavor. If they aren't fluffy you need new baking powder. "- Chet4d

1. In a medium bowl. Combine the eggs, buttermilk and butter. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Make a well in the center of the dry ingredients. Add the buttermilk mixture to the dry mixture and stir till just combined (dont over beat).
2. Pour about cup batter for each pancake onto a hot, lightly greased griddle. Cook over medium heat for about 2 minutes per side or till golden brown, turning to the second side when pancakes have bubbly surfaces and edges are slightly dry. Serve warm with additional butter and syrup if you like Makes 10 to 12 pancakes.

Loular68 9 months agoKids all loved it. Only question I have is how much salt to use? I went with 1/2tsp and seemed fine. Either way this has now become a staple for breakfast in our house!!!

justausername 7 years agoI'm sorry, I missed typing in an ingredient. You need both soda and powder: 1 tsp baking powder ½ tsp baking soda I am so sorry. I'm not sure how to edit this recipe other than getting it removed and re-submitting it.
edbro 7 years agoThe ingredient list calls for baking soda. The instructions call for baking powder. Which one is it?
