Do not make this unless you enjoy rich, dark chocolate. I know the recipe says Weight Watchers, but my taste buds say, "you're cheating!"

Cooking Spray
1 cupSugar
1/2 cupunsweetened cocoa
3 tablespoonsbutter; melted
1 1/2 tablespoonsinstant coffee granules
2 tablespoonswater
1/2 teaspoonBaking Powder
1 largeegg white; lightly beaten
2/3 cupAll-purpose flour
1/2 3-oz bardark chocolate; (such as Ghirardelli), chopped

Mocha-Dark Chocolate Brownies Preparation

1. Preheat oven to 350.

2. Coat bottom of an 8-inch square baking pan with cooking spray.

3. Combine sugar and next 8 ingredients in a bowl.

4. Lightly spoon flour into dry measuring cups; level with a knife. Add flour and dark chocolate to cocoa mixture, stirring just until blended. Spread batter in prepared pan. Bake at 350 for 30 minutes. Cool on a wire rack.

Yield: 16 servings (serving size: 1 brownie).

I used the entire egg, reduced the sugar to 3/4 cup, and used 70% dark chocolate. It was delicious!! But definitely not 16 servings as recipe says. More like 5-6.

Changed a few things. Used whole wheat flour and a whole egg, omitted chocolate chunks...YUMMY!!!

OH, BTW, I intend to try Splenda instead of sugar the next time I bake these to see if it will work as well. If so, more calories saved.
