2 1/2 cupspotatoes; peeled, coarsely chopped; about 2 small
1 cupcarrots; peeled and sliced, about 2 medium
1 15-oz cancorn; drained
1 14-oz cangreen beans; drained
2 cupscooked chicken; chopped
1/4 cupButter; 1/2 stick
1/3 cupAll purpose flour
1 14-oz canchicken broth
1 pintHalf-and-half
1 tablespoonparsley flakes; fresh or dried
1/2 teaspoonSalt
1/2 teaspoonPepper
1 12-oz canrefrigerated biscuits

Homestyle Chicken Pot Pie Preparation

Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking dish.

Combine potatoes and carrots witih enough water to cover in a Dutch oven. Bring to a boil and cook for 8 minutes. Drain well.

In a large bowl, combine cooked potatoes and carrots, corn, green beans, and chicken. Set aside.

In a medium saucepan, melt butter over medium heat. Stir in flour, and cook for 2 minutes, stirring constantly. Slowly add chicken broth and half-and-half, stirring constantly. Cook, stirring constantly, for 7

minutes, or until thickened. Stir in parsley, salt, and pepper. Pour

butter mixture over vegetable mixture, tossing gently to combine. Spoon into prepared baking dish.

Separate biscuits, and place evenly on top of casserole. I cut each biscuit into 4 pieces in order to distribute more evenly over casserole.

Bake for 30 minutes, or until biscuits are brown and casserole is hot and bubbly.

I covered the pan with foil after 15 minutes of baking, so that the biscuits wouldn't get too brown before casserole was finished cooking. Casserole needs to be in the oven for at least 30 minutes so that biscuits are cooked all the way through.

Notes

Served with mashed potatoes. Delicious! Will definitely make again.

    Just made this. Like someone else I used crescent rolls instead of biscuits. Also since I didn't have half and half I used a can of cream of chicken and a can of cream of mushroom 10.5 ounce condensed soup and used the drained water from the corn and green beans to make up a can to mix with the soups. All that replaced the flour, butter, chicken broth and half and half. Added an onion and cooked the potato, carrot and onion in the microwave on high for seven minutes. I don't know why but my crescent rolls seemed to cover all of the top of the 9x13 baking dish, so when it came out of the oven it looked much better than the picture here. Thanks for the basic recipe, sorry I had to mangle it! It was delicious.

    I love this recipe! I make it very often and everybody loves it! The only thing I do differently is I use home made baking powder biscuits and I use milk rather than cream.
