Lemon-Cheese Matzah Kugel with Raisins

Ready in 45 minutes

Serves 6. During Passover, matzot replace the usual noodles in kugel (Yiddish for "pudding"). For a meatless Passover menu, this slightly sweet baked pudding enriched with cottage cheese and studded with nuts and raisins can play the role of either main course or dessert. Walnuts can be used, but pecans are sweeter. (From "Passover: The Springtime Holiday" by Faye Levy)
