Quick and Easy Mexican fare.

"This was a HIT for my family!!! I tweaked the recipe a little. As the ground beef and onions cooked, I added salt, fresh ground pepper, and garlic powder. I was fresh out of cream of chicken soup, so I improvised, I added 8 oz sour crean. I also added fresh chopped cilantro to the mix. I only had sharp cheddar and pepperjack cheese, so I used that. I did not tear my corn tortillas, I layered them like lasagna. I used about18(3 layers). Toped w cheese and a little more chopped cilantro for color This w wwill be on my regular menu now. 1 1/2 poundHamburger
2 12-oz cansEnchilada Sauce
2 4-oz canGreen Chilies; chopped
12 eaCorn tortillas
1 12-oz canCream of Chicken Soup
1 can (12 oz)Cream of mushroom soup
1 eaWhite Onion; chopped
2 cupCheddar & jack cheese; shredded

Enchilada Casserole Preparation

Brown hamburger and onion. Pour off fat. Cut tortillas into 1" squares and mix with all the other ingredients except cheese in a large bowl. Add drained hamburger. Mix and pour into a 9x13 glass casserole. Spread cheese evenly over mixture. Bake covered at 375 for 1 Hour. Serve with Sour cream and Salsa.

    I turned this into a macaroni dish. I browned the hamburger & also added taco seasoning. After that I dumped in cooked macaroni & the remaining ingredients. Heated on stove until hot & cheese melted. Turned out wonderful. I brought left overs for lunch today, cant wait! Yummy!

    This was really good and easy to make. The first time I made it the ground beef was a bit bland. The second time I made it we made the ground beef with taco seasoning (seasoned myself, but could use packaged to be quicker), and it came out wonderful with great flavor. My husband commented how good it was this last time. I too layered the corn tortillas starting with sauce on bottom
