Quick and Easy Mexican fare."This was a HIT for my family!!! I tweaked the recipe a little. As the ground beef and onions cooked, I added salt, fresh ground pepper, and garlic powder. I was fresh out of cream of chicken soup, so I improvised, I added 8 oz sour crean. I also added fresh chopped cilantro to the mix. I only had sharp cheddar and pepperjack cheese, so I used that. I did not tear my corn tortillas, I layered them like lasagna. I used about18(3 layers). Toped w cheese and a little more chopped cilantro for color This w wwill be on my regular menu now.
