Originally from an ad for the American Potato Marketing Board, I posted this recipe to the eat-lowfat mailing list back in the mid-90's. It's taken on a life of its own since then and appears in various forms online (including here at BigOven as recipes #8537 and #117642). This is the way I'm currently making it ...
Zap the the potatoes in the microwave until they are just cooked through (about 4 minutes on 90% power). Be sure not to cook them too much. Meanwhile, heat oil over medium hight heat in a large skillet. Add chicken to skillet and brown. Drain water from potatoes and add to skillet. Continue to cook until potatoes are browned and chicken is cooked through. Turn heat down, add corn and salsa and cook until just heated through.
This great one-dish dinner is a favourite for weeknights ... it's fast!
