BBQ Rosemary Potatoes

Hearty side dish; great on a fall or winter evening. I found this recipe in BigOvens Standard recipe box. My son and I enjoyed it very much and I marinated 2 chicken breasts cut in half in some of the mixture and gilled them also.

"Made these last night to accompany a beef tenderloin which was done on a charcoal grill. They were delicious and I used whole tiny new potatoes ... boiled them for about 6 minutes, then I let them marinade for about 5 hours, then skewered them and grilled them for about 15 minutes. 4 mediumPotato; cut into 1 inch chunks
2 tablespoonolive oil
1 tablespoonfresh rosemary; chopped
1/2 teaspoonGarlic; minced
salt and pepper; to taste

BBQ Rosemary Potatoes Preparation

**Prepare a charcoal grill or preheat the kitchen grill.

**Cook the potatoes in salted boiling water until tender, approximately 10 minutes. Cool slightly and thread them onto metal or bamboo skewers.

**In a small bowl, mix together the remaining ingredients. Brush the skewers with the rosemary mixture.

**Place potato skewers on the grill. Grill, basting and turning several times until the potatoes are browned and cooked. If using bamboo skewers, soak in warm water prior to use to prevent burning. If preferred the potato chunks may be cooked without the skewers on a greased BBQ plate turning to brown evenly.

Cooking suggestion: Using two skewers (image supplied) makes turning the potatoes easier, I found they spun around the skewer if only one was used. Jamieo.

    Very good flavor. I may have lost track of time because the potatoes were too soft after boiling to put on a skewer so I tossed them in the rosemary oil mixture and threw them in a grill pan and then on the grill.

    I can't rate it, because I don't make mine this way. But think the result would be very similar to mine. In a foil envelope....I cube my cleaned red potatoes w/skin on, drizzle in EVOO, sprinkle on a tsp. of minced garlic and a tsp of dried rosemary, add salt and pepper, cook about 20 mins. in foil envelope on grill.

    I ended up just tossing the cut, cooked potatoes in a bowl with the oil and spices, then skewering the potatoes and grilling. It worked well for us.

    Instead of grilling the potatoes at the end, I did a quick saute with the rosemary infused oil and it was just as delicious. This would also be great broiled, of course.
