A great family-style main dish. Toasted garlic bread and a tossed green salad round this meal out nicely.

"I am a great fan of this type of recipe. Apart from the fact that it is a great format for absorbing quite a wide variety of leftovers - the only regular change I make to this recipe is a couple of handfuls of frozen baby peas added to the mince/onion fryup (just as the mince is turning away from pink) - it adds a pleasant spark of colour when plating up - and, of course - another dimension to the nutritive value. Original recipe makes 6
1 poundpenne pasta,; cooked and drained
8 ouncesLean ground beef
1 smallonion,; chopped
2 6-oz cansItalian tomato paste
2 cupsWater
1/3 cupred wine; or water
1 tablespooninstant beef bouillon
2 cupsmozzarella cheese; shredded
Salt to taste

Beef Penne Pasta Casserole Preparation

Preheat oven to 350 degrees (F). Saute ground beef and onion in large saucepan, stirring occasionally, until beef is no longer pink.

Add water, tomato paste, wine and bouillon; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.

Layer ingredients as follows in an ungreased 13x9-inch baking dish: 1/2 pasta, 1/2 sauce, and 1/2 cheese. Repeat layers and cover. Bake for 20 to 25 minutes or until heated through and cheese is melted. Season with salt.

Notes

This came out really good; I added a touch of sugar and basil to the sauce and would do it over again. Great served with garlic bread, tossed green salad and a glass of wine...

    Even though I added to much salt, my brother asked me when next I'm making it. I overloaded it with sides of vegetables :) Very nice and filling. Perfect for a winter's night.

    This was extremely tasty. Everyone loved it. Instead of tomato paste I used Ragu spaghetti sauce and added garlic salt and garlic powder to hamburger meat. It said 1 Tb beef bouillon, so I just added whole cube to sauce mixture.

    My family loved it. I did modify the recipe based on what I had in the house...I added some mushrooms, shredded carrots, Italian sausage and used my favorite store bought sauce since I didn't have tomato sauce and prepared the casserole the night before. We popped into oven the next night and it was a fast, delicious dinner!

    Was very good! Read some of the reviews and decided to do my own twist on things! Used spicy sausage, ground turkey, japs, Mild ched chz and mozz with a little finely shredded Parm and orange bell peppers! Also used abt 1Tbsp of dry sherry cooking wine. Halfed the tomatoe paste and added my own italion seasoning. TMy husband has requested this dish again :)
