Quick Grape Jelly
Original recipe makes 1
| 3 cupsbottled grape juice; (unsweetened) |
| 1 packagepowdered pectin |
| 4 1/2 cupsSugar |
Quick Grape Jelly Preparation
Combine grape juice and powdered pectin in a large saucepot. Bring to a boil over high heat.
Add sugar, stirring until dissolved. Return to a boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam, if necessary.
Ladle hot jelly into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps. Process 10 minutes in a boiling-water canner.
Makes about 5 half-pints.
Notes
I usually get 4 1/2 half-pints instead of 5, so one always goes in the refrigerator for quick peanut-butter sandwiches. Kids love it.
