Memere makes the best mashed potatoes. These are them.
"When I started cooking many years ago, I ruined some mashed potatoes by trying to make them in a stand mixer- the result was gluey and gross. I guess a hand mixer is the way to go, because I've made these twice and they're fluffy and delicious. The last time, I used 3 large russet potatoes, 2 tbs butter, and 3/4 cup of milk- perfect for a quick weeknight side dish. Memere's Mashed Potatoes Preparation
Peel and boil potatoes in salted water (1 tsp salt) for 30 - 45 minutes until soft.
Beat with beaters until potatoes are broken into small bits
Add Butter (lots of it).
Add Milk little by little.
Salt and Pepper to taste.
