Broccoli Salad Deluxe

This salad has crunch and sweetness. Broccoli, crumbled bacon, raisins, nuts and red onion with a yummy red wine vinegar and mayonnaise dressing, chilled.

"I was going to get-together where I had to bring salad. I chose this recipe and it was a huge hit. It was the only food item that was completely gone. I brought home an empty bowl. I have made it again because I liike the sweet, sour, crunchy consistency. My daughter had asked me to make it agin. She can't get over how yummy it is. Thank you for posting this recipe!"

2 heads Fresh broccoli; chopped
1 medium Red onion; chopped
8 slices Bacon; crumbled (I use turkey bacon)
3/4 cup Raisins
3/4 cup Sliced almonds; sunflower seeds (or nut of choice)
1 cup Mayonnaise
1/4 cup Red wine vinegar
1/8 cup White sugar; ( I use Splenda)
2 teaspoons Black pepper; ground
1 teaspoon Salt
1 teaspoon Lemon juice
1 cup Sharp cheddar cheese; grated

Original recipe makes 12



Cook bacon over medium high heat or in microwave until evenly brown. Cool and crumble.

Cut the broccoli into bite-sized pieces and chop onion. Combine with the bacon, raisins, your favorite nuts, cheese and mix well.

Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar (or Splenda), pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover and refrigerate until ready to serve.

Important to make it ahead and time and let it set at least 6 hours or overnight.

Great recipe but when mixing the 'sauce' use about half the red wine vinegar and add more slowly to your personal taste. The amount called for in this recipe was way too much for our family. Otherwisereallyyummy!!!!!

Used lite mayo, omitting the bacon & raisins. Was very easy to prepare and a good side to almost anything.

Yum! Used orange flavored craisens instead of raisins. Definitely not a health food despite the broccoli, but very good.

I used 3/4 C reduced fat mayo, and 6 slices of real bacon - turned out great and very yummy.
