2 cupsAll purpose flour
2 cupswhite sugar; regular granulated
2 3-oz packagescoconut flavored instant pudding mix
1 teaspoonBaking soda
1 teaspoonSalt
1 teaspoonGround cinnamon
1 1/4 cupsVegetable oil
5 Eggs
2 cupscanned pumpkin puree

Melt In Your Mouth Pumpkin Bread Preparation

Preheat oven to 325F. Lightly grease two 9x5 loaf pans. In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir in the oil, eggs and pumpkin until just blended. Stir the flour mixture into the egg mixture. Pour batter into prepared pans. Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the loaf comes out clean. Remove from oven and let stand 15 minutes, then remove from pans and cool on wire rack.

The baking time just did not work for me. I baked it an additional 20 minutes more than the instructions called for, but it was still not baked thoroughly, too moist yet in the middle. The bread tastes excellent.
