My toddler gobbles these up!

"I needed something quick, and had most of the stuff on hand, except the parmesan. But I tried it anyways and they were bland but still real good dipped in ranch---my 4 year old gobbled them up. I'm sure they would be much better with the parmesan cheese, and I think next time I would add some garlic to the mix for extra flavor!" - Amandakaz

Original recipe makes 4
3 cupzucchini; - thinly sliced (about 1 lb.)
1/2 cupBread crumbs; - seasoned Italian
3 tablespoonParmesan cheese; - grated
1/4 teaspoonPepper
2 eachegg whites; lightly beaten
cooking spray

Crispy Zucchini Coins Preparation

Preheat oven to 450 degrees. Combine bread crumbs, Parmesan, and pepper; mix well. Dip the zucchini slices in egg whites; dredge in bread crumb mixture. Place zucchini in a single layer on a baking sheet coated with cooking spray. Bake at 450 degrees for 15 minutes. Turn zucchini over; bake an additional 10-15 minutes or until outside is crispy and browned.

Note: Baking time might be a bit long check after 8-10 minutes on first side, second side may only need about 5 more minutes.

    These were a nice addition to our meal! Next time I'll use panko instead of fine bread crumbs. They tasted great dipped in spicy ranch dressing.

    I've made Zucchini chips that are very similar to this recipe. I haven't made this exact recipe, but I can tell these are really good!

    Made this last night and even my picky kids loved them! I used corn crumbs instead of bread crumbs and dipped in milk instead of eggs due to allergies, and added salt, garlic and italian seasonings to the dry ingredients. Will make again soon!
