Big, perfect cookies that are chock full of chips.
Heat oven to 375 degrees. Grease several cookie sheets.
With an electric mixer, cream butter with light and dark brown sugars until light and fluffy. Blend in vanilla. Add eggs, one at a time, beating well until incorporated. Mix flour, salt, baking powder and ground coriander until well mixed; add to butter mixture. With a spoon, stir in nuts, chocolate chips, and butterscotch chips. With a 1/4-cup measuring cup, scoop cookie dough onto cookie sheets. Chill dough on cookie sheet in refrigerator for 10 minutes.
Bake in middle of oven for 12 to 15 minutes or until golden.
I left out the ground coriander and the pecans, because I didn't have any on hand - and they were great. You could use any combination of chips or nuts, according to your preference.
