Dressed Up Jello - Diabetic Dessert

This diabetic dessert is simple to do, refreshing, and low carb. It also looks great on the plate.

"I served this to 6 ten year old boys as an afterschool snack. Each had a condiment size dish of jello and on the center of the table I placed 6 thick slices of fresh pineapple on a plastic cutting board with one boyscout knife. All enjoyed the jello, but the carving of the pineapple took on many differrent shapes. A big and creative hit for the guys! We had stick figures, shapes, moon " - hanan@home

1 packageSugar-free Jello; - Your favorite flavor
1 cupWater; - Boiling
2 teaspoonsSplenda; - to taste
1 cupUnsweetened Applesauce; - chilled

Dressed Up Jello - Diabetic Dessert Preparation

Dissolve the Jello in one cup of very hot water. Stir gently for at least 2 minutes to assure it is completely dissolved. Add the Splenda during this process. When completely dissolved add the applesauce, mix well and place in the refrigerator for at least 4 hours until it's completely set.

This can be cut in cubes, spooned out, or dished up in creative ways. I used a melon baller to make small spheres which I served with a small chunk of fresh pineapple. It also goes well with low-cal yogurt in a contrasting flavor.

Each (app 1/2 cup) serving of this (without the pineapple) contains an estimated:

Notes

I served this once with fresh pineapple (sided with a bit of blackberry brandy) and again with lo-cal raspberry yogurt. It was delicious both times.
