I tried this recipe when the kids were toddlers to stretch the budget. Oh, I didn't realize how DELICIOUS granola can be -- fresh out of the oven! Mmm.

Original recipe makes 24
4 cupsold-fashioned oats
1/4 cupBrown sugar; packed
1/4 cupVegetable oil
1/4 cupHoney
1 teaspoonGround cinnamon
1 1/2 teaspoonsVanilla extract
1 cupRaisins

Cinnamon-Raisin Granola (serves 24) Preparation

In a large bowl, combine oats and coconut; set aside. In a saucepan, combine brown sugar, oil, honey and cinnamon; bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat. Spread in a large shallow baking pan. Bake at 350 degrees F. for 15 to 20 minutes, stirring occasionally. Cool. Add raisins. Store in an airtight container. 6 CUP
