Burger Serbian Way
If you ground your meat :
Cut meat to pieces about 1" add all ingredients but skip onion ,mix and leave minimum 4 hours in the refrigerator. Ground meat, mix about 2 minutes and put back in refrigerator for least 1 hour. Ground one more time and leave in refrigerator 12 to 24 hours. Before cooking add onion mix well and make patties.
If you use already ground meat :
Add all ingredients but skip onion , ground meat one more time mix well and leave in refrigerator 12 to 24 hours. Before cooking add onion and mix about 2 minutes.
If you are ready to cook make patty 5" by 1/2" .
Cook on grill , flat grill or fry pan 3 minutes per side.
Serve in lepinja bread bun or pita bread slightly wormed.
If you use lepinja bread bun ,slice bun open deep in mix of chicken or beef broth after boiled with adding some ground pepper, salt and some oil and worm up bun on flat grill.
Don't forget BEER.
You really need to use the prime cut like organic grass fed sirloin top if you are in the US because all other meat tastes bad in this recipe. Then, you should chop some bacon and cackaval bits into your pljeskavica, because hot pepper flakes will not bind the flavor...bit of baking soda is mandatory to fluff the patty. then, the BUN...don't forget to choose kaiser bun, grill it and soak some meat juices in it. then....the grand finale is if you can find kajmak (most of the bosnian stores have it!!!), and chopped onions....yum yum yum.
