Mango Chutney

If you've ever eaten indian food, you may have had this in some form. It's a wonderful condiment that tastes delicious with meats, curries and on flatbread.

Original recipe makes 32
2 poundsmangos; - peeled and chopped
4 tablespoonSalt
2 1/2 cupsWater
2 1/2 cupsSugar
2 cupsCider vinegar
1 tablespoonfresh ginger; minced
2 clovesgarlic; mashed
2 teaspoonsChili powder
2 medium stickscinnamon
3/4 cupraisins; - chopped
2/3 cupdates; - pitted, chopped

Mango Chutney Preparation

Chop mangoes into medium pieces. Place in a large bowl, add salt and water and let stand overnight.

Drain mangoes, reserving the soaking liquid. Combine sugar and vinegar in a saucepan and bring to a boil over low heat. Add mango, stirring to coat all pieces. Add ginger, garlic, chili powder, cinnamon, raisins and dates. Bring to a boil stirring occasionally. Reduce heat and cook for about 1 hour or until very thick .

Remove from heat and let cool. Remove cinnamon sticks and place chutney into a sealable container. Allow to stand in a cool place for flavor to develop then close. Store in refrigerator.

Alternatively you can seal the jars hot using conventional canning techniques and observing precautions to prevent spoilage.

Turned out great, but I did have a couple of questions: 1. The recipe says to reserve the soaking liquid - why? 2. The chili powder that's used - is it meant to be Tex-Mex style powder or something like cayenne? Next time we have a surplus of mango, I'll pull this recipe out again.
