Also known as Malagan Gazpacho, this no-cook "salad in a bowl" is ideal for hot weather. Healthy, colorful, refreshing perfection.

"At 6 pm tonight, it was 108 degrees here, and believe me, there was NOTHING on this earth I wanted to cook my family for dinner. I just whipped up a batch of this soup in 20 minutes, no cooking, and it is delicious! It is chilling a bit more now, because I think tonight my family is going to want dinner "extra cold"! 2 poundsripe tomatoes; peeled (seeded if you wish) and chopped
1 1/2 cupsSpanish onion; chopped
2 cupsbell pepper; chopped, any color
2 cupscucumbers; peeled and chopped
1/3 cupExtra Virgin Olive Oil
1/3 cupwhite wine; or sherry vinegar
3 clovesgarlic; chopped (can use more to taste)
2 slicescountry bread; crusts removed
1 tablespoonlemon juice; - about 1/2 lemon
1/4 teaspoonSalt; - to taste
2 cupswater; - ice cold

Gazpacho Andaluz Preparation

If bread is a bit stale, soak in some water for a bit to soften, then squeeze dry; tear softened bread into large pieces. Mix all ingredients together well, using hands or a large rubber spatula. In two batches, puree the mix in blender, adding approximately 1 c. of the water to each batch. Chill thoroughly, and serve VERY COLD!!

Traditional garnishes include finely chopped cucumber, onion, bell peppers, garlic croutons, and chopped hard-boiled egg. Serve as condiments alongside the gazpacho; a large dollop of sour cream or creme fraiche atop each bowl of soup is also nice.

I am not a huge gazpacho fan but my hubby loves it and has been begging me to make it. I have to say this is the best gazpacho I have ever made. I would strongly recommend that you use sherry vinegar over white wine though as that makes the soup so much more flavorful. I make become a gazpacho convert after making this! will def make again!

Gotta have gazpacho on a hot day in the summer theres nothing like it. This was great and easy to make. I added cilantro and a chopped jalapeno to add some spice. This disappeared pretty quick at my house.

This gazpacho is the best I've ever made. I did reduce and sub the onion (spring instead of Spanish), used strained tomatoes instead of water, and added chopped cilantro. It was spectacular. Great summer food.

My sister who is a gazpacho addict liked this. I doubled the garlic in it which is a family trait, so suit yourself (still not particularly noticeable).
