"I've made carbonara in the past and it was less than successful but this one turned out really well. My kids devoured it and I had two helpings myself :) Some people said that once it cools down, it gets dry and reheating makes it worse. My husband works late and so I had to reheat it for him, and what I did was put a little splash of chicken broth in the bottom of a skillet and put the noodles right in there with it. As they heated up, the broth soaked into the noodles, bringing back that creamy texture to the sauce. Will make again!"- mtdewaddict82

Bring a large pot of salted water to a boil. When it is boiling, throw the spaghetti in. Most dried spaghetti takes 9 to 10 minutes to cook, and you can make the sauce in that time.
Cut the bacon crosswise into pieces about 1/2 inch wide. Put them in a skillet and cook for 2 minutes, until fat begins to render. Add the whole cloves of garlic and cook another 5 minutes, until the edges of the bacon just begin to get crisp. Do not overcook; if they get too crisp, they won't meld with the pasta.
Meanwhile, break the eggs into the bowl you will serve the pasta in, and beat them with a fork. Add some grindings of pepper.
Remove the garlic from the bacon pan. If it looks like too much fat to you, discard some, but you're going to toss the bacon with most of its fat into the pasta.
When it is cooked, drain the pasta and immediately throw it into the beaten eggs. Mix thoroughly. The heat of the spaghetti will cook the eggs and turn them into a sauce. Add the bacon with its fat, toss again, add cheese and serve.

Pattianne20002000 3 months agoI added 1/2 lb diced ham and planned to add 1 cup of peas, but forgot. I also used minced garlic and left it in for flavor. My daughter, who does not like tomato based sauces, loved it.

JonHewitt 5 months agoReally nice. I forgot the garlic. But I followed the recipe and tasted good. Makes a nice change from tomato based sauces. I added more salt for my taste buds. The egg did scramble a little but who cares! The wife liked it.
cathyggarza 5 months agoI add with the bacon while cooking: I diced jalapeño 1/4 or 1/2 cup of diced onions Then add them and the pasta to the eggs in the bowl to cook the eggs. I add a little more salt and pepper to my taste. I like to sprinkle Tabasco sauce on top to add flavor.. Use to your taste. Chop 3 green onions and garnish the dish of pasta with them.

rebekah_mackey_13 7 months agoEggs need to be tempered before you add hot pasta. Done this way the egg curdles and you get pieces of scrambled egg stuck to your noodles. To temper the egg add some of the hot pasta water to the egg slowly while whisking to heat the egg without cooking them. Then add the pasta and you will have a perfect sauce.
