| 4 eachChicken; - boneless skinless breast halves |
| 2 tablespoonButter |
| 1 containerWal-Mart Sugar Free Drink Mix; - Early Rise Orange |
| 2 cupWater |
| 1 tablespoonCorn starch |
Orange Chicken For Diabetics Preparation
Clean chicken and trim any excess fat. Cut into bite size pieces. Dissolve drink mix in water. Place chicken, butter, and drink mix in covered skillet or electric dutch oven. Cook on low heat for 15 to 20 minutes or until chicken is done. Remove chicken and set aside.
Bring liquid to a boil. Meanwhile dissolve corn starch in small amount of water. Stir into orange sauce and continue cooking until thickened. Add chicken and stir until coated. Serve with either steamed or fried rice.
My wife believes the recipe as above is a little tart so I use one half of the orange drink mix when fixing it for her.
