Shrimp Linguine in Clam Sauce

Sort of a Linguine in Clam sauce with Shrimp instead of Clams. You know the old saying, "If we had some ham we could have Ham and Eggs if we had some eggs." Only 18 carbs.

"My wife and I like great tasting food but due to our hectic schedules, can be made on the fly. We expected this to taste good, but wow! Did we underestimate it! Not if, but when I make this again, I am going to make about 1/3 more sauce and experiment with some other cheezes. I agree with the comment "if you like garlic." However, if you don't want as much, I don't think it would make too much difference to use less than it calls for."

8 ouncesPasta; - Linguine
1 poundShrimp; (26 to 30 count), cleaned and devained
1 cupsClam juice; - bottled
1/2 cupButter
2 tablespoonGarlic; - finely chopped
1 teaspoonThyme
1/4 cupParsley; - finely chopped
1/2 cupParmesan Cheese - freshly grated

Shrimp Linguine in Clam Sauce Preparation

Cook pasta according to package directions, about 8 to 10 minutes. Drain and keep warm.

Meanwhile In a suarcepan melt butter, add the garlic and cook one minute over moderate heat until soft. Stir in clam juice. Add salt, pepper, thyme, parsley and shrimp. Simmer until shrimp is pink through out.

Divide linguine between four serving dishes. Pour shrimp mixture over linguine. Sprinkle with cheese.
