These can be cut out as animals, shapes, numbers, or letters depending on the cutters you use.
Grind 1 cup oatmeal in blender a until fine. Add salt, brown sugar, flour and soda. Cut in butter. Add honey, and buttermilk. Mix to a firm dough. Form into rounds and place in refrigerator for about an hour (or more if you wish).
Do not grease cookie sheet. Preheat oven to 400F
Roll very thin on a floured surface. Cut with animal (or other shape) cookie cutters. This goes faster with two people as it's a bit labor intensive. .
Bake at 400 degrees until brown (6 to 10 minutes). Bake leftover pieces too.
Watch closely as these from from golden, to brown, to dark down in a minute or so.

I make these in one inch letters and numbers for my 2-year-old grandaughter to identify and eat. She gets a treat and learns the alphabet all at the same time. Her mom like them because they're low sugar and "healthier" than most cookies. Clever Grandpa !!
