Summer Prawn Salad

|1 smallRed onion; finely sliced|
|2 Roasted red peppers; cut in strips|
|750 gramsLarge cooked shrimp; (31-40 count)|
|2 Mangos; peeled and sliced|
|3 Avocados; peeled and sliced|
|Arugula; washed and dried|
|-- Dressing --|
|2 TFish sauce|
|3 TLime juice|
|1 TRice wine vinegar|
|2 TPeanut oil|
Summer Prawn Salad Preparation
Combine all dressing ingredients and mix well. Combine first 5 salad ingredients and toss gently with dressing. Serve on a bed of arugula garnished with lime wedges and freshly ground pepper.
(Note: the original recipe mixes the arugula in with the other ingredients but I found it got too soggy. It also arranges mango and avocado slices on top of the other ingredients which I haven't tried but would probably look nicer.)
