This is an adaptation of a recipe that was originally found in the Portugal News.

Original recipe makes 6 Servings
1 smallRed onion; finely sliced
2 Roasted red peppers; cut in strips
750 gramsLarge cooked shrimp; (31-40 count)
2 Mangos; peeled and sliced
3 Avocados; peeled and sliced
Arugula; washed and dried
Lime wedges
-- Dressing --
2 TSugar
2 TFish sauce
3 TLime juice
1 TRice wine vinegar
2 TPeanut oil
1/2 teaspoonSalt

Summer Prawn Salad Preparation

Combine all dressing ingredients and mix well. Combine first 5 salad ingredients and toss gently with dressing. Serve on a bed of arugula garnished with lime wedges and freshly ground pepper.

(Note: the original recipe mixes the arugula in with the other ingredients but I found it got too soggy. It also arranges mango and avocado slices on top of the other ingredients which I haven't tried but would probably look nicer.)
