I usually freeze half for another meal.

You can also use reduced-fat and low-sodium ingredients.

"Ok I admit that while I told the entire family that I was making the stuffing and potatoes this Thanksgiving I didn't know what to expect when I began making this side dish. And for a guy with limited experience in the kitchen, I must agree with earlier review, make this dish the night before and wrap it and set in fridge overnight. 5# of peeling potatoes takes someone like me a while. But this dish is so worth it!! I was asked several times for the recipe. I think it is delicious and just left out so much salt. Not a huge fan of that much. But to each their own!"

Ingredients

Are you making this? 
5 lbs Potatoes; peeled, quartered
6 tablespoons Butter
2 1/2 cup Cheddar cheese
1 cup Milk
1 cup Sour cream
2 large Eggs; large
1/2 cup Green Onions; chopped
1/2 cup Bacon; cooked crisp, crumbled
2 1/2 teaspoons Salt
1/2 teaspoon Pepper

Original recipe makes 12 Servings

Preparation

1. Heat oven to 350.

2. Lightly coat a 3 qt. shallow baking dish with non-stick spray.

3. Cook potatoes in just enough water to cover for 20 - 25 minutes, until tender when pierced.

4. Drain in a colander and return to pot.

5. Add butter to potatoes, mash with a potato masher until smooth.

6. Stir in 2 c. cheese, milk, sourcream and eggs until blended.

7. Then add onions and bacon bits, reserving a few tablespoons of each for garnish.

8. Stir in salt and pepper.

9. Spoon into prepared baking dish.

10. Sprinkle with remaining 1/2 c. cheese and bacon.

11. Bake, uncovered, 40 minutes or until top is lightly golden.

12. Sprinkle with remaining onions.

Notes

Mash potatoes while still hot, to prevent them from becoming gummy.

I use a food mill or ricer to mash potatoes.

Very good, kids loved it but not a main dish. Next time I'll serve with fried mushrooms or veggies. I also doubled bacon and onions and added a bit of garlic powder. Also used 3 cups of cheese as that is a size package I got and didn't want to waste it. My kids said they want even more bacon :)

Takes a while for pre-baking work, so suggest prepare beforehand and have oven ready.
